3 Min Prep Chicken Curry Hack: Paleo Friendly

I had all the ingredients to make slow cooker butter chicken and at 4:00 pm, I realized what I had plan to make was a slow cooker dish!!!! I had no dishes left for the week so I didn’t have other meals to choose from.

I didn’t want to waste money or worry about finding something Paleo friendly out to eat, so I made due with the ingredients and the time I had!


I poured a can of full fat coconut milk in my Dutch oven and wisked in curry powder, turmeric and cardamon. Next I poured in a can of diced tomatoes, then placed my whole chicken breast in the liquid, and done! It was seriously that easy.  We had to run to the store and left it simmering on low until we got back one hour and 15 min later.


I shredded the chicken and added it back into the liquid along with chopped broccoli. You can add any veggie you like or have left in your fridge.  That’s the beauty of a curry dish!



We served ours over cauliflower rice from my mom’s garden. How cool is that!!! This was incredibly easy to throw together and has a ton of flavor!


3 Min Prep Chicken Curry Hack: Paleo Friendly

Prep Time: 3 minutes

Cook Time: 1 hour, 15 minutes

Yield: 4


  • 1 can of full fat coconut milk
  • 1 Tsp curry powder
  • 1/2 Tsp turmeric
  • 1/2 Tsp cardamom
  • 1/2 Tsp Himalayan salt (or sea salt)
  • 1 14.5 oz can diced tomato
  • 1 head of broccoli
  • 1 head of cauliflower


  1. Place can of coconut milk in dutch oven
  2. Wisk in curry powder, turmeric, cardamom and salt
  3. Add diced tomatoes then place chicken breast in liquid.
  4. Cover and simmer on low for about 1 hour
  5. Take chicken out and shred with two forks
  6. Place chicken back In Dutch oven along with the chopped broccoli
  7. Simmer for about 10 min with lid on to steam broccoli
