Paleo 4th of July Picnic Roundup for under 20$

4th of July weekend is coming up; WHAT! I am not even sure how it’s possible but it’s here! Wanted to share a meal idea that is healthy and budget friendly 🙂

This past weekend we celebrated our sons first birthday!!!! Crazy how fast this year has flown! That also means I am coming up on my 1 year anniversary of eating Paleo 🙂 We decided not to go the traditional route of a formal Birthday party and we took a family day trip to the beach for a picnic and then off to see this amazing garden/zoo!

I had saved a couple picnic type Paleo foods on my Pinterest board since Easter, but never made them.  I thought Aiden’s first birthday was the perfect time to test them out.   The menu included, lemon basil chicken drumsticks, Paleo bacon egg salad and fresh cut up cantaloupe.   I had a few basic ingredients for the chicken marinade but other than that I only spent $17 on this awesome meal. This fed 4 adults and two kids ( with a little left over!).

I got a pack of 12 drumsticks on sale for around five dollars, a dozen pasteure raised eggs for 5$, and cantaloupe for 2.50. The uncured bacon was 3.88 (thank you very much Walmart for your awesome price on natural bacon). I did have some leftover green onions and used basil I have growing in pots but the cost is minimal to add that on.

Even if you’re not Paleo or are cooking for non-Paleo family members, you could always add some grilled corn on the cob for a couple dollars more.

The egg salad was killer! The best part about chicken drumsticks, is you can eat it cold, so no worries if you are packing it up to take to your get together! Add some cut up cantaloupe or watermelon (or both!).
