I shop on Tuesdays and Wednesday’s for the week and I post the week of meals we are finishing up. I have tried out one new recipe and have one more to go! Only picking a couple new recipes a week, is one of my strategies on making Paleo work on hectic nights. With Father’s Day and our son’s first birthday this past weekend, I did not get a menu out last week so I am glad to share this week!
I included 6 meals since the 4th is this weekend and many people may be cooking out with family and friends. Be sure to check out my 4th of July Menu
*i posted this one on my last menu but it’s a great one for summer and you can change up the toppings like fresh pineapple or jalapeños. I served ours over mixed greens and saved the rest of the greens for the Strawberry Basil Chicken.
**To make this dish Paleo, I substituted sour cream for coconut milk that I had in the fridge. I used the thick part; about 1/3 of the can. The recipe showed it over zucchini ribbons but I served it over cauliflower crumbles (rice).
***We served ours over mixed greens and made it a salad (bonus: used the other half of the strawberries to make Strawberry Paleo Muffins at the request of my husband)
