A few years ago, I made a really yummy Fresh Herb Alfredo Pasta dish from The Silver Palate Cookbook. This recipe was inspired by that dish and adapted from this Coconut Alfredo Sauce . It never ceases to amaze me all the different uses of coconut milk!
I used dry herbs to save a little time but fresh would be awesome too (fresh is what is used in The Silver Palate Cookbook!). The first time I made this, I used the two cans the original recipe called for and had a ton, so the second time I made it, I used one can (just be sure to adjust the amount of arrowroot powder by half if only using one can). If you make the full two cans, save the left overs to serve over Savory Parsnip Noddle Chive Waffles (on next weeks menu).
This is the spiralizer (aff link) I use that takes up very little room in a drawer, and works really well for zucchini noodles!
