Paleo Herb Chicken Alfredo over Zoodles

I cannot believe I forgot to take pictures of this dish!!!!! I will make it again soon and add some photos 🙂

A few years ago, I made a really yummy  Fresh Herb Alfredo Pasta dish from The Silver Palate Cookbook.  This recipe was inspired by that dish and adapted from this Coconut Alfredo Sauce .  It never ceases to amaze me all the different uses of coconut milk!

I used dry herbs to save a little time but fresh would be awesome too (fresh is what is used in The Silver Palate Cookbook!). The first time I made this, I used the two cans the original recipe called for and had a ton, so the second time I made it, I used one can (just be sure to adjust the amount of arrowroot powder by half if only using one can).  If you make the full two cans, save the left overs to serve over Savory Parsnip Noddle Chive Waffles (on next weeks menu).

This is the spiralizer (aff link) I use that takes up very little room in a drawer, and works really well for zucchini noodles!


Paleo Herbed Chicken Alfredo over Zoodles

Total Time: 20 minutes

Yield: 4


  • 1 Tbs Olive oil
  • 1Tsp Oregano
  • 1 Tsp Basil
  • 1 Tsp Thyme
  • 1/2 Tsp Rosemary
  • 2 Cans of coconut milk
  • 1 Lemon
  • 3 Tbs Arrowroot powder
  • 1 Tsp Hymalaian salt plus more to taste
  • (This makes enough sauce for both this recipe and leftover sauce for another recipe so if you do not need that much, one can with 1 1/2 Tbs arrowroot powder will suffice
  • 2 Large chicken breasts cooked and cubed
  • 3-4 Zucchini
  • Optional vegetable such as broccoli or 1/2 bundle of chopped asparagus.


  1. Heat olive oil in a medium pot, add herbs and cook for 30 seconds to 1 minute
  2. Add in coconut milk, lemon and whisk on medium low.
  3. While slowly whisking, add in arrowroot powder and continue until sauce thickens (a few min)
  4. Add in salt and adjust to taste
  5. Mix sauce with cubed chicken (sauteed, grilled, or any chicken you already have left over), optional vegetable and zoodles*).
  6. *For my zoodles I place an inverted plate over a shallow pasta bowl and microwave for 2 minuets.
