Paleo French Toast Banana Pudding

I love breakfast food, always have.  I’d be perfectly fine with a hearty breakfast for dinner anytime! The reason why I found Paleo so easy for me, is not having to give up on the food I used to enjoy but finding Paleo friendly versions of those foods.

I don’t know if your mornings are anything like mine, but there is definitely a time warp!! I am always looking for something fast and tasty that my kids will enjoy as well!

We eat A LOT of eggs in my family (like 2 dozen or more for 2 adults a toddler and a baby!). Let’s face it, sometimes you have to mix it up a little!

One time, I “fried” some sliced banana with cinnamon and maple syrup.  Although good, not filling enough for a meal so I had this idea to add eggs to it.  I thought this was either going to be genius or a complete failure…. So happy I tried, OMG yummy!!! The cinnamon and maple syrup with the whisked egg tasted like French toast with banana.  Only I swear better because it has this smooth pudding like texture to it.  It only took 4-5 min start to finish! Win!!!

I layered the sliced banana is the pan and sprinkled cinnamon.  I did a really light drizzle of maple syrup.  While the bananas were absorbing all that goodness, I wisked 2 eggs with vanilla extract and poured right on top of the bananas.  I picked up the pan a couple times to swirl the eggs around and to completely coat pan.  Just as the bottom formed I started flipping mixture over with the spatula.  A minunit later, all done!

Paleo French Toast Banana Pudding

Prep Time: 1 minute

Cook Time: 4 minutes

Total Time: 5 minutes

Serving Size: 1

Ingredients

  • 1 Banana
  • Cinnamon
  • Maple syrup (enough to drizzle)
  • 2 Eggs
  • 1 Tsp Vanilla extract

Instructions

  1. Slice banana and layer in pan on medium low
  2. Sprinkle cinnamon over bananas
  3. Drizzle a light amount of maple syrup over bananas
  4. While the bananas are warming up, whisk the eggs with vanilla extract
  5. Pour egg mixture over bananas and swirl pan to coat evenly
  6. When bottom of egg mixture begins to form, use spatula to flip over egg mixture
  7. Cook until egg mixture cooked through
